I love these little breakfast sandwiches! I usually don’t have too much time before work to make breakfast, but I manage to make these sandwiches in about 5 minutes. It’s well worth it to have a hot and tasty meal to start my day off right. These sandwiches consist of just 5 easy ingredients. I discovered that using a small egg pan makes for a perfectly-sized egg patty for this sandwich and easy cleanup. I bought mine for only $5 on Amazon.
- 1 English muffin
- 1 large egg
- 1 slice of cheese
- Small handful of spinach
- Toast the English muffin until lightly browned
- Heat your egg pan to medium heat. Crack the egg into the pan and cook for a couple of minutes. Using a rubber spatula, flip your egg and cook until your desired level of done-ness.
- Assemble your sandwich by layering the cheese (I split mine in half to make it fit better), spinach, egg patty and mustard on top of one muffin half. Top with the other muffin half.
